Cooking. The Other Art.

For those of us with a passion for cooking,

and the creation of great meals for us and

our loved ones, the term chef carries weight,

carries passion and a responsibility to the whites.

Those of us with the passion, and a desire to gain

control over our weight it becomes even more

important, and an intrinsic part of our day-to-day.

The knowledge to make a meal low carb, low salt,

paleo, or whatever the current “trend” is makes a

world of difference.

I personally know  that the knowledge has helped

me and others with the battle of the pounds.

I guess my suggestion is: Learn as much as you can

and use it. For the longest time I used to cook once

a week, for the whole week. It helped me stay on track

and I enjoyed that day creating good, tasty, flavorful,

nutritious meals within my diet limitations. My diet

for many years has been: Low fat, Low sodium,

Low carb meals. I really enjoyed grilling meats and

vegetables for my meals.  I also made at least two different

soups enough for 4 meals at least.

Cooking, good cooking is a pleasure. Learn and

take your skills for a spin.

For many years my father wore a baseball cap

that read: “Everybody is a legend in their own mind”

The thing is that, it was in English and he spoke no

English that I knew of.  Yet he always had an explanation

as to the meaning of it. It was: “expect nothing but do everything

then you will be able to make your own life, your own future.”

He was not an educated person as it refers to school education

but he had survived some of the toughest times in the history

of Mexico. He was never in debt as he never borough for anything.

He never had less than two jobs, yet he always had time for family.

And he was ever-present for all that mattered when it was about

home and family. Never knew how he did it, but he did.

From him I learned that: “The size of my frustrations was equal

to the size of my expectations.” I also learned that it was up to me

to get and have anything I wanted. I had my first business venture

when I was 8 going on 9 years old and I have never forgotten the

lessons I learned then.  He never did care about the way he looked

even though he always looked good and well put together. I learned

how great it felt to accomplish and obtain things that we cared about.

Not a perfect man by any-means but a great man all the same.

All I can hope for is that someday my kids will feel that way about me.

Inform Yourself.

What is a Lap Band or more appropriately

a gastric band? Well… It is a tool that some of

us with a chronic weight problem have obtained.

It is a medical device that when used correctly

assists with a reduction of food consumed.

Anyone who is considering this as an option

must not only educate themselves but they

should absolutely sick professional assistance.

There are many programs and I will NOT here

recommend any one specifically, I will however

recommend that you find a surgeon that has lots

of experience. My surgeon was by far one of the

biggest assholes I have ever met but, but he had

more experience than all the others combined.

As a result I was in for surgery at 10 or 9 AM, and

by 1 PM I was at the market buying soup to take

home with me for later. I was given pain medicine

and I have to say I needed none of it. I was told that

I would be out of commission for at least a week, but

I was back with my regular life in 3 days.  I was going

crazy with the lack of activity.  Please note that this

was my experience and yours or anyone else’s might

be significantly different.  I had a great surgeon but

a crap support program. (I am sure it was my fault)

Considering this or any other WLS??? Inform yourself.

There is still plenty of work to be done.

We are work in progress so do not

forget or get complacent.

The more we try the better we get at it.

Life and living is a moving target.

We might be better at one of them but

are we getting better at both at the same time??

I have been told by people smarter than me that

the act of living is a whole encompassing process

that few, very few master.

Shit I just try to keep my head above water.

I try to work out every day.

I try to stay to my diet every day.

I work on woking on me every day.

AND THAT is what I wish you would do.

Stay focus. Remain Successful.

Learning, Growing.

that you can make.

Reading provides for us the busy folk the easiest

way of learning.

Learning unleashes a tremendous flow of potential

in us all. If we want to be better than we were yesterday

reading will help us make that happen.

Any topic or interest we might have is covered extensively

either in a book or a blog and all we have to do is

google it and thousands of answers will pop at us.

Reading the magical potion.

Please remember that he who does not read is in no better

place than he who can’t read.

As you start to learn and utilize the resources available

keep in mind and try to help someone else.

If you find a book that helps you try to help someone

who could as well benefit from this. Be a friend, be a true

friend and do for others before they ask. even if they don’t ask.

On books and reading.

Recently I did a repost on Facebook about

books I had read in the past and I was asked

about the books I was currently working on.

This books are an example of what I read on daily

basis. I try to stay up to date on Social Media and

any worthwhile new authors. Mayann McFadden is

a good example of good and up-coming (to me) author.

I keep my Kindle handy as I keep well over 400 books

in it that I read for pleasure or reference also, I use it

to access scripture as it makes it easy to read.

I have a deep love for books and reading

has helped me grow as an individual. It was with

deep pain that I learned of the passing of Gabriel Garcia

Marquez who was and still is a big influence for me.

I still get excited reading Tom Sawyer and get deeply

involved when I read and re-read The Mysterious Stranger both

from Mark Twain. But also, I was enthralled with Harry Potter

and will always be thankful to J K Rowlng for teaching me more

than so many other authors that I as an individual or as a

writer am limited only by my own crazy and some times stupid

self imposed limitations.

Never forget that the person who will not read is in no better

position than the person who can’t read.

Few things will have a bigger impact in your life as reading can.

the writing itch.

This is a rather large community of writers

a year to bring new materials to life.

I do not claim to be a writer as you all know

English is not even my first language but I

enjoy the creative process and if you have

All my life I have had a love-hate relationship

with Dietitians. Every single one of them I have

had the pleasure to deal with has been a Liber..

Anyway… Having had to live in the real world

with real limitations and visiting with real flesh,

fat and bones persons I quickly realized that some

of the classic ideas and thoughts pushed by RD’s

were BS for the regular salt of the earth person walking

your street, USA.

This cartoon reminds me of just one example.

I struggled for years trying to lose 20 pounds. Yes you read

that right. MY first attempt was only a small 20 pounds and

I failed for the longest time.

Years later as part of my internship for my CDM (clinical

dietary manager OR  certified dietary manager) I did my

paper on the Atkins Diet. At that time I was at about

335 #’s and I threw my self into this paper and this

diet. I went from 335+ pounds to 225 pounds in 3 months.

My labs were amazing. My back pain gone, My stamina

through the roof. I felt great.

I lacked the discipline to keep it off and with my internship

and graduation behind me I revert to bad habits.

My point here is: Not all diets work for everybody, Not all

predicated concepts are fail proof. Not all that is pushed

on us by the ADA is perfect. And most important we  must

gather as much information and educations so that we might

find what works for us. Atkins worked for me but it does not

mean that I think It would work or that it should be tried by

everybody., far from it. We are all way too different. but,

Once you find what works for you make sure you stick

to it as there is where the lasting results await.

Stay committed to your goal. Remain centered on health.

Keep your goals and dreams present so that your work will be

enjoyable and satisfying.

Knowledge VS Practice

another week for monday

Something that has become clear as of late

is that there comes a time when we must

stop learning and start doing.

I have seen myself being a tremendously

prepared and educated individual being

the least active or performing person.

It is not because of a lack of knowledge

but more a lack of enough activity.

We have access to so many bloggers here

sharing so much knowledge and we are

accomplishing so little because we continue

to absorb and do little implementation.

Recently Dan Miller from 48 days to the

work you love titled his weekly blog:

“Stop Learning Start Doing”

This is our challenge gang.

It is our time to Start Doing.
