I love and enjoy photography.
Reading the message in the photo made me
think of taking photos with film, we get one chance
and we best not waste it because it is gone.
In some ways it is the same with life, opportunities
and adventure come and if we are not aware
the chance is gone.
Weight loss is also like that. We make many
small decisions and if we are not aware it is easy
to mess up. My mother told me many a time:
“Nothing is as easy as being mediocre”
I ask you not to be mediocre. I hope my efforts
keep me from being mediocre.

Carbs. Is there anything more scary
to many dieters?
I, myself am on a low carb diet, but I
am not letting that rule the whole of
my process and weight loss efforts.
There are times when I need or want
something and I get it. I know that want
as I might at times I either want, need, or
deserve a treat, reward, or fix and I do not
deny myself. I have however learned to
differentiate a one time thing from a whim.
Keeping goals and priorities present helps
to limit the number of exceptions and that
is always a good thing.

Sad but we all have something within us that
at some point and time controlled or at least
affected our life or the ability to enjoy it.
By developing our daily routines we strengthen
our selves not just physically but also spiritually
and with that we can move on towards a better
series of tomorrows.
Keep your goals and commitments present.
Go for your walk and do your exercises
as you said you would., and follow your diet too.
Learn to keep your word., to others but more importantly
To Your Self.
Our project is our life and body and both are
within our grasp to improve or mess up.

Because each of us is so different
we must figure out what works for us.
By not having a centered approach
we can miss out on the opportunity
to find the ONE thing that actually
could be a game changer.
I made it clear that my approach was
low carb, high protein, low sodium
and low-fat diet and the reason is
very simple to me: It Works For Me.
This was not about fancy advertisement
or a good-looking person on TV. I tried
many of the other diets and none of them
did it for me. This one did. NOW!! I am NOT
telling you to do the same but, what I am
telling you is that you should look and work on
finding the one that works for YOU.
I have purposely not used diet or product
names because I do not want you to assume
quality or efficiency on any of them. I want
for you to go and try so you can find on your own
the right one. POINTER It all starts with you.
Figure you out and you will win.
YOU are worth it so please stay with it.

On Monday’s and other necessary evils.
We all know that for a new start every day
is a good day.
I like Monday’s… Yes I said it. I like Monday’s.
It is a clean slate with endless possibilities and
I want to take a shot at it. I want to do what others
do not because I want what others can’t have.
Be weird with me. Let’s make it count.
This day and every day is a great chance for a
fresh start or a new goal.

This is my favorite flower.
It reminds me of the South.
Passion. We all have passions and photography
is one of mine. Eating is another but that is
a story for another time.
In pursuing my passion for photography
I add the activity factor and go for long, long
walks. Drink the water and making sure to
carry and eat high nutrition value snacks to
keep the energy high.
I get my cardio and with any luck
maybe one good or even great picture.
Gang figure out what you like or even better
what you are passionate about and make it
part of your day-to-day.
Also as you go about your “day-to-day”
keep your eyes open as there might be someone
to whom you can be of help in bringing out some
good by being of help and support. Give a hand
give a coin give a bite of food and if possible
give friendship. True and real friendship.

Sometime ago while still active in the Work Force
I was Executive Chef for Banner Health Systems.
During that time I had a chance to work with some
great talent but I also had a chance to see the amazing
difference between a real and an implied chef.
I worked with J. Mazza a then young, inspired and very
creative chef. I also worked with some amazing cooks.
And the passion that this guys had was so amazing that
quieted down the negative noise and bad JUJU that we all
had to deal with from our Director. It was an inspiration
that stayed with me. We knew that we were making an
impact on every single patient in that hospital.
I have also worked with lazy ass cooks that all they can
do is talk about how somewhere in the past they “used”
to do this or the other and go on and on about mother
sauces. Or the implied chef that best they can do is buy
a bag of cubed cheese or pre-made pastries and present
it as Haute Cousine.
Let us honor some real true culinarians.

Health Care cooking is hardest because of the pre-conceived
idea that institutional food is bad. Let me tell you
you would be lucky to eat food prepared by this gang
of culinary misfits.
Gang we might be on a diet or trying to lose weight but
that does not mean that we should not enjoy our food.
In large it is me wanting to enjoy food while simultaneously
wanting to lose weight that pushed me towards the Atkins
Diet. I love bacon. I am not quitting bacon so here I am.
Find a new restaurant. Go to the heart hospital if you are
in the Phoenix area and have one of their award-winning
burritos. Yes they are that good. Gang find something to
enjoy. Go eat something new something exciting.

Numbers can have tremendous power.
If we let them.
Numbers should serve the purpose of
inspiring and keeping us focus.
We can not allow a number to dictate how
our day will end or start. BUT…
We can not allow either our whims and
moods to have a similar effect on us.
Weight loss with or without Weight Loss
Surgery (WLS) is a daily battle, a commitment
to a better, healthier life and as such it
requires planning, commitment and
execution. Plan your meals in advance,
make sure you are drinking the water,
when purchasing groceries keep in mind
your goal and limitations.
If you are past the surgery then you have
received all the training and instructions
to be successful. NOW Go Do It.
We are all in it so reach out if you have
questions or challenges.

I know very well that I have to take certain meds
every single day. At very specific times.
I know that I need them.
But What to do when for whatever reason we
are unable to take them. What to do when
the pain hits and you are unable to function.
If you are depressed or dealing with fibro
with out your meds you might as well
just sit and breath as there is not much else
you can do. I KNOW.
There are many reason why we at times are
unable to take our meds as prescribed and
we must avoid that by any means but when it
happens try to have a plan B even if it is just
to howl at the moon in a therapeutic fashion.
or fantasize about inflicting the same pain
on some one who has not kept their promises.
Hope you never go through putting up with pain
because of lack of meds… It Sucks
If you use lyrica or Cymbalta like I do you know
how severe the withdrawals are if you do not
follow the prescribed times.
I guess I am just venting and letting my own
body know that we still have more battles to
fight in the future. All in all pains and all
I am grateful to be alive today.

All my life I have had a love-hate relationship
with Dietitians. Every single one of them I have
had the pleasure to deal with has been a Liber..
Anyway… Having had to live in the real world
with real limitations and visiting with real flesh,
fat and bones persons I quickly realized that some
of the classic ideas and thoughts pushed by RD’s
were BS for the regular salt of the earth person walking
your street, USA.
This cartoon reminds me of just one example.
I struggled for years trying to lose 20 pounds. Yes you read
that right. MY first attempt was only a small 20 pounds and
I failed for the longest time.
Years later as part of my internship for my CDM (clinical
dietary manager OR certified dietary manager) I did my
paper on the Atkins Diet. At that time I was at about
335 #’s and I threw my self into this paper and this
diet. I went from 335+ pounds to 225 pounds in 3 months.
My labs were amazing. My back pain gone, My stamina
through the roof. I felt great.
I lacked the discipline to keep it off and with my internship
and graduation behind me I revert to bad habits.
My point here is: Not all diets work for everybody, Not all
predicated concepts are fail proof. Not all that is pushed
on us by the ADA is perfect. And most important we must
gather as much information and educations so that we might
find what works for us. Atkins worked for me but it does not
mean that I think It would work or that it should be tried by
everybody., far from it. We are all way too different. but,
Once you find what works for you make sure you stick
to it as there is where the lasting results await.
Stay committed to your goal. Remain centered on health.
Keep your goals and dreams present so that your work will be
enjoyable and satisfying.

I find myself nostalgic and missing my home
in Mexico. This picture was taken there
a while back., sitting on the balcony.
I am not there right now. Wish I was.
I went for my walk today and for the first time
I required a jacket. A sure sign that I will
need to be mindful about food as we approach
the season of the year when many of us do
the most damage to our plans and goals.
Gang. Our journey is not one where we have to
deny ourselves of everything we love to eat.
We must however start with a plan and a clear
and honest idea of what is going to happen.
I will on one day have mashed potatoes. I know this
and I know what day that will be. So before I sit
at that table I will force my self to drink two (2)
glasses of water and then and only then I will
confront the potatoes.
I have a plan. Maybe dumb and silly for some
but this will work for me.
During the season I will eat pumpkin pie, turkey,
gravy, etc. And I will enjoy it.. A Lot.
I miss Rocky Point, Mexico So Very Much.
